There were a few versions of the Toucam I used the one that had 1.3 megapixels as an example because I had no other information. The settings you have shown look good for the 640 x 480 pixel version.
You can't tell the version of stellarium unless you are compiling it yourself and you did not say whether you had the release version or one you had compiled yourself and I don't think the release version had support for a CCD.

you can get the build 4856 version of the ocular module. This has a number of key bindings to select oculars, sensors and telescopes. They are:
toggle_oculars=Ctrl+O
toggle_config_dialog=Alt+O
toggle_telrad=Ctrl+B
next_ocular=Ctrl+]
prev_ocular=Ctrl+[
next_ccd=Shift+Ctrl+]
prev_ccd=Shift+Ctrl+[
next_telescope=Shift+]
prev_telescope=Shift+[
toggle_crosshair=Alt+C
ccd_rotation_angle_minor_decrement= Ctrl+8
ccd_rotation_angle_minor_increment= Ctrl+9
ccd_rotation_angle_major_decrement= Shift+8
ccd_rotation_angle_major_increment= Shift+9
ccd_rotation_angle_reset=m
These keys will allow you to select how you display the view. Just toggle through them till you have the arrangement you want. If you select a telescope and a sensor it will display what the sensor sees at prime focus.

which at the moment is very complicated to use with popup menus that are not linked to the configuration button. If you get it make sure you read the readme file first. This version also has a copy of my ocular.ini file
