Really don't know if I like the HDR effect - but I guess it suits some "postcard" type shots like these. I like the "darker" look that it gives a photo, one with almost a "gothic" look. I left the intensity up on the Bridge because I really wanted it to sparkle, whereas the Opera House I like more subdued.
I've modified the Bridge shot as well as The Rocks. The Bridge was still a little too bright for me after consideration, and the bridge approach really did need to be included in the Rocks restaurant shot.
i'm down in sydney at the moment, and would love to get some night time HDR shots around the city, but i'm going to have to settle for the daytime HDR i took today instead
heh, i'm still in sydney, so there's still time! but alas, i doubt i will be able to get out and do any night time HDR.
as for moving water HDR... that'll be tricky because the form of your water will change with each photo, thus giving you ghosting and whatnot...unless you manage to some how use a long enough exposure for all your shots to give that fog like look to your water? i dunno, i wish you luck with it!

The foggy, fluid effect is exactly what I'm after Josh. Water in HDR always works well because of the fact that each frame is different. That's why the water in my harbour shots looks nice and velvety.
