Advice Sought - CCTV Cameras

Any CCTV experts on IIS and can assist me get my head around a work related problem.

Would 560TVL CCTV camera operating via Ethernet cable (Cat5e) offer better resolution than a 600TVL camera operating over coaxial cable.

I have 8 cams at my place and reckon a minimum of 700tvl anything less is really not up to scratch. Also something that will give a minimum of 30m night vision. I am using coax and it is fine in my opinion.
