Post Rumballs

Here's an easy Festive recipe.
I've made 3 batches of them tonight. Hic.
They'll knock your socks off.

Ingredients

1 800gm dark fruit cake (Black and Gold brand is perfect, it's made by Top Taste anyway)
3 heaped tablespoons of cocoa ( Cadbury or Nestle )
1/2 cup of Bundy rum.
Desicated Coconut

In a large bowl, crumble the fruit cake into fine crumbs.
Add cocoa and mix well.
Pour Rum over the mixture and mix well. Squishing it into a mooshy mixture. Taste test a small amount and add more rum if needed.
Use an icecream scoop to scoop out mixture, use your hands and roll it into balls. Wash hands first.
If mixture seems a bit dry, add more rum.
Roll balls in coconut. Place in a sealed container.
Store in refridgerator.

Warning - Don't eat and drive.

Another festive recipe!

Ingredients

1 800gm dark fruit cake

Desicated Coconut

In a large bowl, crumble the fruit cake into fine crumbs.
Add cocoa and mix well. Put this aside, it isn't needed right now.
Have a sip of rum.

Place half a dozen to a dozen ice cubes into a clean glass jug (1 to 1.5 litres is a good size), keep this handy. Have a sip of rum.

Carefully pour all the desicated coconut you have in a bowl, then pour it into the rubbish bin - it's nasty stuff and you don't really want to eat it, do you?
Have a sip of rum, just in case you got some coconut in your mouth.

Pour the Rum slowly over the ice cubes in the jug, add coke to taste if desired. Taste test a small amount and add more rum if needed.
Have a sip of rum.
Have another sip of rum.


Use an icecream scoop to scoop out the cake / cocoa mixture, use your hands and roll it into balls. Have several sips of rum.

Throw the cake balls out the window at passers-by and neighbourhood cats.
Take a large swig of rum. Throw more cake balls. Shout "Yee Haa" loudly each tie you score a bulls eye. Have a sip of rum.

If you seem a bit dry, add more rum.
Have a sip of rum.

Store leftover rum in refridgerator.
(Gotcha! Trick instruction - there won't BE any leftover rum!)

It's just not the same using Coke Ken, you can use Rum Essence instead.

Rum balls, yum... my favourite. If you're like me and need an instant fix, Coles have some packet ones for around $2.40 and they are as good as any I've tasted (barring yours of course JJJ ).
