Is there simple software out there that allows me to see my cameras field of view against a deepsky object?

CCD Calculator (http://www.newastro.com/book_new/camera_app.php) is a good start.

I use starry night pro, you can use virtual telescopes and cameras inside it to see what you will image. Only problem is its going to cost your pocket some :( I'am pretty sure the skyx has the same features but only in the pro version which is a lot more then starry night pro :(

I'm not sure you'd call them "simple" but CdC, C2a, Halo Northern Sky and Stellarium all let you define ocular and camera FOVs, and are free. This is what I get from CdC with rectangles defined for the guide scope (outer) and CCD on 127ED (inner). CCD Calculator as mentioned by Troy will give you the numbers to feed into the FOV definitions.

Like Andrew I use CCDcalc and CdC (Cartes du Ciel), as I find CCDcalc on it's own is really only usefull for longer focal lengths.
