That log cabin construction looks mighty nifty. Does anybody know if this kind of thing can be sourced here?

Not sure if this is the answer you are after, but I did see an episode of Grand Designs (it was on Foxtel, but I think the show is on the ABC also), and this slotted wood was used to build a house - like in kit form. The big BUT - the material was sourced from Finland!

They mentioned in the show the wood was laser cut to get the exact lengths required. This allowed for the computer design of the home to take into account the positions of the doors/windows/etc.

I mention this because I noticed in the photo after the main shed was assembled, there appears to be very little wastage, which makes me think this was a custom design order, more than buying the wood "as is" and build to suit. While the pictures of the build are interesting, a bit more material details wouldn't have gone astray on the website.

Anyway here is a link to that episode:

And here is the link to the company that makes the wooded homes:

Update: Like yourself, I'm yet to find a similar product here in Australia, but this is the closest I could find:

I've seen this type of construction at the ski fields, eg. the day visitor shelters at Falls Creek in Victoria. They look like they're kit-style buildings. Maybe you could try alpine architects?

IMO looks to be Pine
If you want the locking style
the easiest cost effective option would be to use pine floorboards
120mm x 19mm or 150mm x 22mm as they lock together
I went a different way
just used Lapped pine siding works a treat
and spray the outside with oil annually.
