Are there any Capture Files better and give more detail when used with stacking X number of images?
Like .tiff, fits, raw, etc.

As long as they're uncompressed, it doesn't make a difference. Just stay away from jpeg/gif.
Some programs handle the smaller file sizes like FIT/RAW better. TIF is the largest file size.

Avoid jpeg! Only use jpeg when saving for the web, and that's after you resize the image to approx 800px wide.

I agree with mike to avoid JPG in general.
The thing to take note of more so than the file type/extension is the bit depth. if you're using a 8bit TIF and 8bit RAW then you'll get the same data. But if you're using an 8bit TIF converted from a 12bit RAW then you're losing data. You'd then want to make sure you're using 16bit TIF which easily encapsulates the data within the 12bit RAW.
