Quick question. My Windows 10 desktop only has 8gb of RAM. Do I need more for big stacking & general high-res image processing?

I’ve been running Windows 10 for 2 years now with no issues.I was advised prior to buying my new laptop to have at least 16gb RAM for Astro stacking and post processing software
I ended up going overkill on the laptop and bought a HP Omen which has 32gb RAM
It’s super quick and never lags
So I guess more RAM the better

I'd say that you'd want at least 16GB as most systems these days like having at least 4-8GB to play with to keep the operating system running otherwise the computer crashes.

you can never have *enough* ram in your machine. I added a extra 256GB SSD purely to configure page/temp files to use, its still not big enough for what I'm trying to process at times but it has helped prevent windows interrupting me so often and slowing things. 16GB is what I considered a minimum ten years ago.
