Hi,
a couple of really good, simple Pixinsight tutorials are here:

I struggle to find the time, or get my head around processing, so like you, this might be just right.

Harry's Astroshed was particularly good.
The Light Vortex Astronomy set of tutorials is great for beginners and pros. Very easy to follow along with even if you don't understand whats going on. There's even a workflow tutorial I think (or used to) which helps beginners understand what sort of processing steps are needed and where in the processing workflow they belong.I was able to use some info from LVA to improve my own workflow when I first encountered the site. Just run through a tutorial or two with your own data and I'm sure most people will gain something. The are great tutes, not perfect or best processing approaches in every stage, but plenty of well described steps for anyone to learn from to improve what they do if they are willing to learn.
