In Settings/Updates and Security/Windows Update there is a setting called Change Active Hours . Here you can set the hours of the day (or night) when you do not want the computer to restart for updates.
I believe that is new to version 1607

I recently did the anniversary upgrade but had to turn off the metered connection setting to download. Now that metered connection option appears to have disappeared from the Settings menu. Other than that, everything else seems to run fine.

Found it under Settings - Home - Offline Maps - Metered Connections.

Unfortunately it has no effect on automatic updates.

I did know about that but I misread your previous comment - I thought you were saying you could choose when to restart, as in don't restart until I tell you!

Metered connection setting has worked for me in preventing the system from updating during imaging sessions in the past, I have not validated it is still working post the anniversary update. If you are considering a Win 10 update you should read up on Cortana (and how to kill this "feature").

In the anniversary update it still does not download updates over a metered connection.
