Say i point my video camera down the eyepiece and recorded for a few minutes.. Is the software out that will be able to cut frames and even stack them?

Virtual Dub can be used to edit your frames and save them as bitmaps or .avi's ready to be used in stacking programs such as Registax or DeepSkyStacker.
What did you image??
You can get some pretty swank planetary shots using a stock standard video camera.
