How do people protect their cameras for nightscapes?

I've always wanted to try the nightscape videos that show the stars wheeling over a night-time landscape, and I've a question for those that do;

Do you set up your camera and then go do something else, or does it require constant vigilance? By that I mean do you camp next to your camera? Or do you leave it and collect it in the morning? Or do you just set up your scope nearby and do a night's observing at the same time (making sure not to point the red torch in the direction of anything the camera is capturing)?
