Win 7 is my preferred now. I would have said XP 12 months ago but as I have to build and support them I've found most of the shortcuts and really, underneath it all it's just XP again. Some minor annoyances with the added security options but they can be managed and any user should be installed as local admin regardless.
There is a 'godmode' btw if you haven't heard about it.
