Exactly. I make windbreaks out of a clothes rack and a heavy wool blanket, and I have nil wind issues (and it blows RIGHT across my driveway

Surely you could make some windbreaks Mike? Even some 4X2 posts with some corrugated iron between the posts.
Or, you could stand near your setup. You seem like a natural windbreak
