Slitless grating spectroscopy (Star Analyser/ Rainbow Optics) is certainly possible.
Jack Martin prepared is Atlas of Bright star spectra using a SLR camera and a 12" dobbie.
The field rotation will limit you to the brighter stars...but it is a start.
It's not really feasible to use an undriven dobbie for serious spectroscopy using a slit spectroscope.
