M57 and M31

I have such question. I am very amateur in taking photos of DSO, but some photos I have tried to take. And I had such problem.
When I observed the region between Beta and Gamma Lyrae, I couldn't found there M57 (I live near Moscow, my light pollution is corresponding and I have not so good scope, 2,5 inches). But after taking photo of that region, I found it on a photo.
After that I tried to get a photo of M31. In my scope it is sometiong like a gray ellipse. Ellipse. By the way, without M32. But when I took a photo of it, I found M32 on the photo, but M31 exists on it only as a round spot. Round. It looks like my loved M13.
Why in one case my eye is more sensitive than the camera and less in other case?
