Yes, but I think the device will only output a 2, 3, 5 or 8mp image. (not including all the video formats)
It uses all the pixels in whichever preferred aspect ratio you want use (all width or all height) to oversample to produce those images.

The zooming feature - both optical and digital, crops and resamples the entire imaged area to provide a "lossless" result.

But what I have read doesn't fully explain it - so that could be all wrong !

I also dont understand the claim about a Bayer free image, but again that may have to do with the resampling methodology. The claim that all pixels actually have full RGB information may have to do with the fact that one final image pixel (of a 2-8mp image) is really a fully resampled version of many individual RGB pixels from the original possible 41mp.
