Funnily-enough I watch HEAPS of both Vimeo and YouTube videos on my iPad - via both the dedicated apps and via Safari browser. I fail to see any legitimacy in your statement.
Maybe one in a hundred don't work via Safari on the web side, and that's often a fault of the videographer who may have intentionally (or accidentally) checked the box labeled "don't show to mobile devices" on upload.
iTunes is a matter of personal choice. On a Mac, it's fantastic. Windows is..meh... Windows.
