My standard settings are:
Manual exposure.
1/250 sec (max flash sync speed)
F11
ISO100
AF centre point
I use a Canon 580EX II off camera flash in ETTL-II mode and sometimes vary the flash by ± 2/3 stop depending on the insect and background.
