Have a look at the observing hutch made by Dennis Simmons in the projects sub forum.Much better than those awful looking 'poo pens'.The hutch he has made looks much more sophisticated and could be made the same or slightly different to your specs.
You could get some 'star pickets' and put into ground,and the attach some timber lengths to these,drill holes at top and thread wire between and hang tarps for screen.Or why not put netting up and grow a natural screen cover
with climbing type plant.
