Hi Chris and congrats on the scope.

2" barrells are common in wider field eyepieces. I only have one 2" which is my 34mm widefield.
A plossl is a fairly simple eyepiece design. It usually has a 50 degree apparent field of view. I can suffer from poor eyerelief at shorter focal lengths but is low cost and at mid range (15 to 32mm) is a pretty good eyepiece. Your 26mm should serve as a good alround ep until you decide if and what others you need.
I will leave it to others with more knowledge of these scopes to offer advice as to what EPs to buy
