Equations? hmmm
Best I can come up with are:
(a) 3-(5-3) = 1
(b) 10-(7-(10-(7-(10-7)))) = 9

But they are both very ugly and don't realy correlate with what is happening with the measures(jugs).. I'd go with the descriptions.
