How do I tell what the build is?? Is it in a config file or something?
I wish my toucam had all the pixels you think it has but had to settle for
3\name=toucam
3\resolutionX=640
3\resolutionY=480
3\chip_width=4.6
3\chip_height=3.97
3\pixel_width=5.6
3\pixel_height=5.6
This seems to work but I wish I could get rid of the oculars. I just want to see the camera view without a lens in front of it. Is there some kind of "do nothing" lens that will let me see just the "prime focus" view?

Firstly what version of stellarium are you using. The CCD sensor was only perfected with build 4856 and was completly changed again with build 4858.
As far as I can guess the Toucam will have the common pixel size of 5.2microns and the chip will be nominally 1316 x 987 pixels so the chip size will be approx 7.4mm by 5.06mm
These values can be entered for a start and then see how the view compares with a full frame shot
These are the values I entered in my ocular.ini which works for the early and late plugin versions
3\name=toucam
3\resolutionX=1316
3\resolutionY=987
3\chip_width=7.4
3\chip_height=5.06
3\pixel_width=5.2
3\pixel_height=5.2
The actual FOV will depend on the focal length of you telescope
