Congratulations on your first galaxy Brent. And a great description and sketch.
I suspect that the object that you saw with binos around LMC was NGC 2070, the 'Tarantula neblua'. One of the best observing targets in the sky I reckon. Get you 10" scope on it and you will be able to trace dark lanes for hours. It is the largest star forming region known in the local group and is lit by stars of incomprehensible dimensions.
I can't offer any advice re levelling or setting circles as I only star hop. I found the whole setting circle thing too complex. Over time you will find that your experience of just pointing accurately at a patch of sky you know will become very common.
