The manuals are a good start.
No photography book I know is going to explain the difference between Canon-specific terminology such as One shot AF, AI Servo AF, AI Focus AF, etc.
I've only got wedding photography books so can't offer any recommendations, other than learning the rules of composition and when/how to break them, then learning about light. Having said that, I see titles like Understanding Exposure pop up on fora quite often. Might be a good place to start?
