Bit quiet so I thought Id share this little gem I read in MX yesterday.
(Thats a free Sydney newspaper)

Chef's Tip on Poaching fruit

"When poaching fruit the amount of sugar you need in the poaching syrup
will depend on the fruit's sweetness. Tart fruit will need quite a lot
and sweet fruit will need only a litlle."

Reminds me of one of Basil's classic lines
