In the past, when I used Outlook Express, I just copied the *.dbx file to a safe location once a week as a backup.
You'll find it at:
C:\Documents and Settings\<username>\Local Settings\Application Data\Identities\{hexadecimal key}\Microsoft\Outlook Express
