indeed, that looks closer to the horsehead you posted, however as you say the horsehead's saturation level (from memory) was perhaps a little higher...
For the mosaic, are you ensuring all panels are equally exposed? if not you could have a hell of a time getting the final imaging looking right.. I'd be aiming for 10x30min per panel with shorter subs used where needed to tone down brighter areas....
