I wouldn't convert it to greyscale or desaturate in photoshop.. This will save all the data in the G and B channels, which is all noise, into the final image.
Instead, go to the Channels tab, select just the red channel, copy that channel, click, file -> New image, click ok, and then paste the red channel into the new image.
Your data looks fantastic.
