I'd suggest Acamar -- Theta Eridani

Which should be at about 30 degrees elevation at about 8pm EDST. Is the brightest star in its locale so easy to find approx 1/3 of the way from Achernar (Alpha Eri) to Rigel (Beta Ori).
A little later on, perhaps Gamma Arietis?
