There are options to set in iTunes that tell the iPOD whether or not the PC can access it as an external HDD or not (I don't think that allow access into the music files put on the iPOD by iTunes).
If you're gonna give it another go, just tell iTunes where to find your mp3 files and don't make it the default media player - it will lock all your files up so you have no access
