Clayton has the best seeing that I have found yet in SA. I go to Clayton every summer and each year it has always had good seeing. I have only seen one night where is was 10/10, but that was 3 years ago. During winter Wallaroo has great seeing also. Don't worry about the salt, the proximity to the coast will more than make up for a bit of salt mist. It can always be washed off.
You will find that Toops often has good seeing but as Graeme said it has lots of cloud too.
In terms of the wind for the south coast, I have found that it blows quite hard all day at Clayton but drops after sunset. This is solar generated wind, so once the sun goes down it becomes quite still.
The Barossa is nice for seeing, but tends to be a bit spasmodic.
For Dark skies go anywhere that is 150km from Adelaide and you get nice dark skies.
