North - you adjust the altitude only.
East - you adjust the azmith only.

I'd suggest not thinking in terms of "in the eyepiece". If the star drifts, use the scope's hand controller to move the star back to the centre. Which way did you slew the telescope? N,S,E or W? That's the direction you need to know. If you start thinking "in the eyepiece" you will likely get confused by various optical systems and conflicting explanations etc.
