It really depends where you are going camping and what time of year but one sheet would usually only be enough on a warm summer night. Most people use a sleeping bag but if you don't want to buy sleeping bags, a couple of blankets might be sufficient as long as you aren't going to the Victorian Alpine areas.

If you are going soon, Spring in the south east is always difficult to predict. You can have warm air come down from the northwest or icy cold air from the southern ocean. Weather can change rapidly in 24 hrs.

Also, make sure you have good insulated camping mat not an inflatable hollow air bed. Air beds are very cold. Inflatable mattresses filled with foam are best and they self inflate. If you want cheap, use a closed cell foam camp mat, like a thick yoga mat. Available in most camping stores.
