No worries, try for the smallest ROI you can, but if 100 fps is all you can get (which should be the minimum for Jupiter) , set the shutter speed to 10 ms and reduce your gain accordingly to give you 50% histogram levels.
Here is the option you want for recording in raw always - it's in the Image/Debayer menu at the bottom of the Settings window, it's really useful
