If it were me I would certainly try it in a video editing package with a 50/50 dissolve between the images either side of the missing night/s as a possible "easy" solution. With say 1/2 second per image that would make a nice but adequately brief 15 second video of the month's moon phases and probably not make the the "interpolated" images seem that obvious. Of course there's no guarantee that exposure/brightness wouldn't also need to be played with depending on your initial image parameters and moon position in the sky.
