I think they usually layer the birch...like you cut multiple "washers" from birch bark and stack them on the tang and these are tightened down and shaped and finished.
But your knife looks very nice Lewis it would be a shame to use it really.
I missed a great opportunity to possibly get another nice knife as there was a Viking day at Lismore recently which I missed but the photos I was shown of the wares available that day showed what seemed to be some excellent hand made knifes...next year I will make a point to go and see if there is anything worth adding to my collection.
