If you have a copy of Astronomy 2019 ( or earlier years ) by Wallace, Dawes & Northfield, which is a great yearbook for Aust. & the southern hemisphere, (no affiliation ), in the back half on pages 141 - 143 there is a Deep Sky section listing almost 300 deep sky objects which make up an excellent beginner / intermediate observing list. Includes objects from the Messier and Caldwell Catalogues as well, all observable in 250mm scopes.
As to NGC 2438 the planetary neb in M46 I have observed it easily in 150mm apertures from semi dark skies with direct vision. Averted vision certainly helps but it is not an difficult object once it is first spotted.
The Bambury 600 is another great list of targets put together by an experienced campaigner but as you say, some are faint fuzzies that may lack a little in the wow factor. If you want a bit of an challenge, try counting how many galaxies you can see in the Fornax Cluster in the 250mm newt, some are only faint smugdes but it is a great exercise in taking time to observe as opposed to having a quick peek at the big bright objects.
