I am sorry to say, but the Uluru astronomy event looks like a bit of a tourist trap, without much amateur involvement.
Your itinerary is a bit tight, but the previous week in South Australia would be the time to contact astronomers with big dobs. Unfortunately you are not coming to NSW where most of us are.
I suggest you just enjoy your honeymoon and start saving for a real trip down under to mix with fellow astronomers who will show you the delights of the southern skies. April/June is the best time to visit, and it can be very cheap once here if you stay with fellow enthusiasts.
