You can save what you're currently working on as a "project" and it will save all open images, process icons, history etc as they are. Open the project up in 2 years time and it should be just as you left it, history and all.
PI doesn't care about your camera. It just deals with image files. Certainly deals with 450D RAW files, JPG, FITS and more. What is your image capture software? Presumably it would save CCD images as FITS?
