"Voice Recorder" has very few options if you need to manipulate the sound file, but is OK for general recording.

I personally use "Audacity" although is not for the faint hearted, it is a complex solution although once understood basic functions are easy to pick up.
It free as well. Customise installation just in case they install some software that you don't want.
