I do find it amusing that I first played Elite something like 30 years ago on our Commodore 128. I would have been around 10 and was blown away by the wireframe graphics. I even made one of the little ships out of balsa wood. Now I walk around inside the cockpit of one in VR.

I only played ED with the Oculus DK2 so it's even lower resolution and the text was quite difficult to read - but still usable. Like you say the scale of the ship interiors really got me, also being able to look around as you were trying to land somewhere was really helpful. It was rock solid for me with the DK2 so I hope you get to the bottom of your troubles
As for NMS I think I'm actually liking it more as I play more. Not sure if I was just unlucky for the first 15 hours or so but the last couple of nights playing I've seen some really beautiful and diverse planets and have enjoyed it heaps more than I was. The problems are still really prominent but I've learned to ignore them.
