Glen, what you get through a filter or otherwise at this point is all just "luminance"
how you assign a colour to it is up to you and is just aesthetics.
Btw, try:
dcraw -4 -o 0 -D -t 0
This should output a 16-bit monochrome TIFF file, with no funky business.
