In all seriousness though, aircraft burn fossil fuels. The chemistry of burning fossil fuels is:

Hydrocarbon + oxygen -> water + CO2

It's cold up there, as any mountain climber will tell you, and under favourable circumstances of temperature and humidity clouds form easily. You've got a vehicle up there burning about 5kg/km of fuel, generating about 6kg/km of water mixed with soot (onto which the water can easily nucleate) and CO2.

If the atmosphere is too dry the water will disperse quickly leaving no clouds, but if it is already close to or at saturation the water will persist as clouds.

"Chemtrail" conspiracy theorists document a lot of these "chemtrails" and post the pictures to Facebook and Youtube a lot, and you'll notice that a large proportion of the pictures also feature high altitude clouds... which is to say, they tend to observe their "chemtrails" more on days when the atmosphere at jet cruising altitudes is quite humid already.

At any rate, if "they" were actually spraying us with chemicals it would be easy to prove. Amateur astronomers have the know-how and equipment to take measurements of the atmosphere, using spectral techniques. If someone were spraying the stuff which the conspiracy theorists say is being sprayed, typically heavy metals, then using amateur equipment we should all be capable of measuring those heavy metal clouds ourselves.

But the only evidence they ever provide is pictures of clouds, often perfectly ordinary clouds which freak them out, and occasionally even pseudoscientific measurements by dodgy labs of hair and soil samples which they claim are contaminated with heavy metals that they claim got there by chemtrails.

If we've discovered one thing about big governmental organisations, it's that they are terrible at keeping secrets. The President of the USA can't even keep a fling with an intern quiet, and the Wikileaks crowd have released thousands of documents of all kinds of intimate details of diplomacy and war.

... but somehow "they" are excellent at keeping the entire apparatus of the air industry either quiet or in the dark. Pilots, maintenance guys, refuelling guys, everyone in the supply chain of fuels, design engineers, aircraft production workers... and amateur astronomers with spectrographs! Add them all up that's a lot of guys who could discover this for themselves and you've got a lot of people to keep quiet.

It seems a much easier method of keeping the populace in check would be to spread a lot of implausible conspiracy theories to make activists look silly.
