Thanks Niv! These were single 30 second exposures with the Samyang 14mm lens @ f/2.8 and 6400 ISO (except for the last one, which is a panorama made up if a series of single 30 sec exposures). You could take multiple images and stack them to enhance the Milky Way, but you would then have to manually merge the stack with a foreground image. So it's easier to just take single exposures. With the 1100D, I would try single exposures at 3200 ISO using the fastest and widest lens that you have. The Tokina 11-16mm f/2.8 would be the best option.
