I have seen this softness in my own 1000D images. I put it down partly to the low pass filter, which I remove when modding a DSLR, because it has an antialiasing effect. A focus mask will help - rechecking focus periodically. Atmospherics, instability is a possibility as well. Food for thought anyway. Sharp crisp moon shots at full moon are difficult, because there is little contrast - flat looking.
