I just thought about using the PST to get a rough drift alignment happening during the day, but I always forget directions.

When I view through the PST with a reticule, and wait 10 minutes and the sun has drifted off in a particular direction.

Now when I make my adjustment, am I adjusting to pull the sun back towards the centre of the reticule?
i.e. if I look into the eyepiece whilst doing my adjustment, would I be moving the object back towards the centre?

yes adjust the mount azimuth to bring the solar image central.
Assuming you're observing around noon...this will not correct the alt position - but is usually good enough for an obsrving session.
