Thought I would give it a go thru the ED80 and the ToUcam.
3 minutes - 25 Frames/sec.
Whaddya think? How can I improve on this? Would it be any better through the 11 inch SCT?

Not bad for an 80mm scope. And yes it would certainly be better through a bigger scope.
The colour is way off--I can't suggest why and the focus also looks as if it could be a lot better. Also, don't enlarge it so much. There isn't the detail to justify it and a smaller image would look sharper.

How did you get it so big? Did you enlarge it by 10x in post-processing?
The C11 will absolutely kill the ED80 for planetary imaging. The ToUcam + C11 will be a great combo to start out with. Get a 2.5x barlow and use "auto" white balance.
Are you using an IR/UV blocking filter?
also, 25fps is too much for the ToUcam - it's compressing the data too much. Use 10fps as a maximum.

Good effort Baz, nice to see something in planetary from the ED80, perhaps some of the others will have a go.
