Indivia Casalinga ....
Sauteed Curly Endive homestyle with red onion, fetta cheese, olive oil, salt and lots of lemon. It's a delicious taste if you like your bitter greens.
Try it with some crusty toasted sourdough bread.

You lost me at bitter greens and red onions
Red onions uncooked gives me the severest indigestion, and bitter greens-----pass
Fetta I can eat heaps however :)
Looks very nice JA but probably not for my palate, Fetta doesn't do much for me.

Hi ALex,
The Ingredients are:
- 1 large Endive (Curly Endive -see image) head (slightly smaller than AFL ball, maybe 2/3)
- 1/2 to 1 red or brown onion
- ~100g of fetta cheese
- Olive oil
- 1 to 2 lemons
- salt (pref coarse sea salt/kosher salt like "David's")
- pepper
Then:
1. Chop the onion and saute in pan on medium heat in generous qty of olive oil (6-8 tablespoons?), whilst preparing the Endive.
2. Cut away and discard the root (say last 10mm) of the Endive and then chop the remainder into say thirds along its length. Wash the endive thoroughly and drain in a colander or similar.
3. Cook the onion until nicely translucent browned/caramelised BUT NEVER BURNT
4. Add the chopped endive and using tongs turn it in the pan to coat it with the oil and onion. Add more oil and generously salt. Place the lid on the pan and with the pot on medium heat, cook for several minutes until the endive is soft and has released its moisture.
5. Drain the water from the pan into a bowl/cup. It's a great salty vitamin rich elixir to drink, if you want.
6. With the endive soft and cooked, check seasoning and add salt/pepper to taste. It's traditionally served somewhat salty, but not everyone likes it or can have it that way especially if on a salt reduced diet.
7. Arrange in the middle of a dinner plate and pour some olive oil on top and around the plate edges, like my picture. Cut 1 (maybe 2) lemons and squeeze the juice over the endives, taking care with the pips.
8. Cut the fetta into slices & batons/ crumble a few over the top of the mound of endives and use some as batons sticking out from the top for visual effect.
9. Serve and enjoy with some preferably buttered quality sourdough bread.
If you like your greens even more bitter you could use chicory instead of endive. There all from the same family-ish. Or even dandelion.

It might just be available in Byron,.......straight from centuries old Italian recipes and similar Greek recipes like Horta. My Nonna must have been hip :D:D

I had to buy a new guitar and an amp, today and pay for the new Askar 130 and wouldnt you know it internet just would not co operate and I spent ages getting just that sortted...I would get half way thru and it would drop out and so I had to start over..and over..and over...but what stuffed me right up was my appointment with my oncologist was tomorrow not today...I don't know how I screwed up there....the receptionist (who likes me cause I gave her flowers when she worked at the chemist out of appreciation for her efforts to get my cancer drug delivered )said my doctor was very busy but said if I waited she would somehow get me in to see the doctor to save coming back tomorrow....however it was a long wait and in the end I decided not do do my food shop...and so I have to wait... next time..
Sortta disappointing cause I had planned it for lunch tomorrow sitting on the jetty to make it extra special...actually I should get a little table and chair just for the jetty dining...
AND the good news is the oncologist is pretty happy with my neck which is really great because frankly I was full of despair..it had not gone down much and over the weekend it was very sore but apparently only a burn...so not the cancer runing wild at least ...she said it is just going to take longer than the first treatment...
AND I said to her it was two years ago two weeks ago since the operation..and she floored me by saying "well you certainly have done well AS NONE OF US THOUGHT YOU WOULD MAKE IT" .:eyepop:...mmmm that explains why when ever I asked how long have I got I never got an answer ...You know how it goes they talk to you but when you get home you realise they did not actually answer your question...
