Is there a SIMPLE way of merging multiple jpgs into a single file?
I am running 64bit Win10

A bit more info would be helpful. Collage, mosaic, panorama? Astro, landscape?

Yes more info needed, but Microsoft ICE, PixInsight DynamicAlign or Photoshop Merge come to mind

I have a 3 page document that I need to email as one document (eg .pdf or .doc etc). I can scan the pages as .jpgs but apparently my Epson XP-442 printer does not have the capacity for merging them into one document. Peter

Two options to consider:

Scan the pages as a PDF & do multiple page scan to form one document.

Or,

Import the .jpgs into a word document & resize the images. Save as a single word document.

Or put it in photoshop, resize the canvas to be 3 pages in either length or width resizing from Page No1 either down or to the right, then copy and paste the other 2 images into the original.

Registar maybe. I use it to merge images from different scopes.

PT Gui for stitching mosaics. APP also apparently is superior for mosaics.

I might add Sequator is free and is good for stacking subexposures.
Microsoft ICE is a free panorama stitching program that works very easily and very well.

Adobe Lightroom and Photoshop added panorama stitching a little while ago. Not bad, not great.

Sometimes one of these works when the others fail or present too much work. PT Gui often won't match skies with stars in them only - no landscape. So you have to manually select stitching points of commonality. A pain but not too bad. PT Gui offers a range of other improvements though.

If you mean side by side, the garden-variety Paint app will do that. Ctrl-A, Ctrl-C & Ctrl V. Can get fiddly with large files though. Will need to muck around with canvas sizes also.
